Many people ask me about tips and advice when travelling to Italy. I thought that if I published them here, one at a time, everybody could enjoy and share.

"I always wondered why in Rome, every traditional trattoria features cheaper cuts of meat that other nationalities would throw away..."

Cooking in Rome, the "Eternal City", has always been an elaborate art reserved for the rich and the clergy. Prime cuts of meat were for the wealthy, while the poor had to make do with what they could get such as waste parts and entrails. Many of these 'offal' dishes remained strong in traditional Roman cooking, which is what, many now wish to preserve. Feet, heart, kidneys, head and tongue are all deliciously prepared and eaten. Pair them with one of the lovely, crisp 'Vino dei Castelli', produced by the many wineries in small towns around the city, and you are set to experience the real Rome, the way it is really lived. Try it, if you dare!

Braised oxtail, for example, is one of my favourite dishes of all time! Try it with me during our next theme dinner, paired with a glass of Corithus from Tenuta Sant'Isidoro, a Lazio IGT wine featured this month.
