No other country is more closely associated with olive oil than Italy. The olive tree was introduced into southern Italy by Greeks circa 600 BC, but it was the Romans who spread olive culture throughout the Mediterranean and mastered its cultivation and extraction. So cherished was olive oil that by the 4th Century AD, the City of Rome, itself, had 2,300 olive oil distributors!
Today Italy boasts more olive oil DOPs than any other country. (DOP=Denominazione Origine Protetta)

We will taste oils in several price ranges and discuss: history, cultivation, processing methodologies, terminology, cultivars and regional differences, the global market and finally, how to taste, assess and compare different oils.
